On the Fire Reuben

If you like Reubens, you’ll love this version of them! Cooked over the fire, they have a unique flavor you can’t get any other way. Pack up your picnic basket with all the yummy ingredients below!

Ingredients (makes 2)

4 slices of rye bread
1/2 C. Thousand Island dressing
1/2 lb. sliced corn beef
4 slices of Swiss cheese
1/2 C. sauerkraut
2 squares of tin foil


Step 1: Spread all pieces of bread with the Thousand Island dressing.

Step 2: Top two pieces with the remaining ingredients and then put the other two pieces on top (for 2 sandwiches).

Step 3: Place each sandwich in a tin foil square and wrap it up into a pouch.

Step 4: Place the pouches onto the burned-down coals in your campfire and cook for 10 minutes. Flip and cook a remaining 10 minutes. Check to see if your bread is toasted. If it isn't, flip it again and continue cooking for another 10 minutes.

Enjoy these delicious sandwiches right out of the foil packets and then just toss the foil in the trash! Easy peasy!
