As a great source of vitamins A, C, and fiber, zucchini is the perfect side vegetable for any camping meal. With its versatile flavor, it can be prepared in so many different ways. It can be grilled, sautéed, baked, or even made into noodles so you can enjoy carb-free pasta. Today we’re grilling our zucchini and adding a light garlic lemon flavor to it for the ultimate summer vegetable side dish. While this will go well with any main dish, I recommend serving it with grilled chicken or fish for a healthy, satisfying campfire meal that even your little campers will love! Make a stop at your local farmer's market and choose firm, heavy zucchinis for the best flavor.
Campfire Grilled Zucchini with a Garlic Lemon Sauce
½ C. unsalted butter
6 garlic cloves, minced
2 tsp. Italian seasoning
Lemon juice (from 2 lemons)
Salt and pepper, to taste
4 medium zucchini, cut into ½”-thick rounds
4 Tbsp. fresh parsley, chopped
- To make the sauce:
Whisk together the butter, garlic, Italian seasoning, and lemon juice. Add salt and pepper to taste.
- Brush the sauce onto the zucchini.
- Add the zucchini to a grill pan that has been warming over medium-high heat.
- Cook them in a single layer for about 2 minutes, or until the zucchini begins to soften.
- Serve immediately!
*Cooking tip: Since zucchini contains so much water, it can often become a soggy mess when cooking. To avoid this and end up with crisp zucchini, first add salt to cut zucchini rounds to draw some of the water out of it. Then cook it at a medium to high temperature so it chars quickly on the outside and doesn’t have a chance to get soggy.
